We released our Highland Tears Spruce Tip Gin last week at the Tasting Climate Change conference at Lightfoot & Wolfville Vineyards.
With a long evening ahead, and much wonderful wine to be had, we were prepared for the sommeliers and industry insiders to make good use of our spittoon - but just a handful did so. All agreed, we have something pretty special.
Our classic dry gin infused with locally foraged Cape Breton spruce buds is lemony, with a subtle menthol finish. Finely balanced, it makes a great martini or French 75 cocktail - yet is smooth enough to stand out on its own.
